Even as a Chef, I enjoy eating out and trying new things or my favorites made differently at different venues. But what I find most important, that most Chefs will want to slaughter me for, is eating YOUR way. Yes Chefs put loads of effort into making menus and pairing particular foods, but you're the one eating it and paying for it.
Who said you can't look at the menu in its entirety and find your dish the way you want it? Yes it can be taboo and frustrate the others you're dining with and annoy your server and make the Chef want to come out and pour scalding water on you, but it doesn't change the fact that food needs to be enjoyable. As long as you're ok with them charging you a la carte then dare to be bold and eat the way you want!
